Regarding the number of kidneys, since the Gemara says that they took *one* kidney from each animal and wound up with 600,000 *pairs* - that sounds like there were a total of 1.2 million. Especially when the Gemara goes on and says that the number of kidneys collected was double the number of people who left Egypt, and 600,000 people left Egypt.<br /><br />Regarding the korban itself, I just looked quickly in the sefer Avodas Hakorbanos and he writes that each korban Pesach had certain parts removed to be offered on the mizbeach. These parts included certain fats and the kidneys. Every korben had at least 10 people assigned to it. The gemara is talking about King Agrippa trying to count how many people there were, or a census.<br /><br />So while there may have been 6 million people in Jerusalem for the Yom Tov, there were "only" 600,000 korbonos. The entire party or family assigned to the korbon didn't come, or have to, come to the bais hamikdash, only the person or representative who was bringing it came. so that would be 200,000 per shift (although the gemara says that the first shift was the largest and the last shift the smallest, so they weren't all equal size).<br /><br />another important thing to note is that the korban wasn't burnt or offered on the mizbeyach. the kohain slit the animals throat and then collected some the blood in a vessel which passed along an assembly line of kohanim until it reached the mizbeyach. The group representative of that korben would then take the animal outside of the bais hamikdash area to roast his lamb on a wooden (from pomegranate tree) spit.<br /><br />so that's still a lot of sheep and people to process in a short window of time.(although they were baby sheep, had to be less than one year old). <br /><br />another interesting note is Josephus' recording approximately 35 years later, the last pesach before the churban, that there were 256,000 sheep.
